Got this 3lb. pack of ground turkey for $10 - turned it all into taco meat & most likely will freeze some of it for later. Tonite, made taco salads - some taco salad tips:

Ditch the fried tortilla bowl, just crunch with crispy chips on the side. Ditch the refried bean mess - mix some kidney & black beans in with your lettuce, tomato, cheese, avocado, etc. Then, make a salad mix “ring” in your bowl, leave the center hollow, fill the middle with your hot taco meat. Keeps the salad cool & crispy, & the taco meat hot…..

Like you said, just take some tortilla chips and crush them up slighting and add to the bowl for the crunch....

Can's skip the refried beans though. Love mere fried beans.

One thing that’s great about living in this area tank is all the family-owned Mexican food restaurants.


Some, like Herbert’s and Garcia’s and Mana’s, have been around for decades.

San Marcos, where I went to college, has a lot of them.

We had leftover ham, and a couple of red potatoes for some reason - made these breakfast egg bites today. Roasted the potatoes first with some seasoning, sautéed the onions & peppers, then baked them in a muffin pan. Gonna freeze what we didn’t eat…..
