Someone else was talking about grilled eggplant recently

I like it fried but never had it grilled

Easier to cook than frying or roasting, and healthier. Stripe peel & cut into 1/2 inch thick rounds, spray both sides lightly with olive oil spray, hit it with season salt, pepper, & Italian seasoning, & grill like 5 minutes a side. Delicioso!
