Forgot to post yesterday - roasted vegetable creamy enchilada soup. Roasted everything first (we wound up not using the mushrooms). Topped it with some cheddar cheese, avocado, green onion, & cilantro - $#!T was tasty! You don’t even miss the meat.

Wife just made these keto ‘popovers’. She added garlic powder, Parmesan, Italian seasoning, & and sun-dried tomatoes to make them “Italian”. Pretty flaky & tasty!

Saw the deli guy putting these out and I was like, “Oh, $#!T! I gotta make some jerky with these!” I grabbed all 5 for like $21 bucks! Going one with spicy teriyaki with my homemade sugar free teriyaki sauce, and honey/sriracha with the other. Gonna let them marinate until Saturday…..

Believe it or not, this was done in the oven. No grill was harmed in the making of the steak.

It was huge! I’ve never had that much meat in my mouth!
No sides. They made green beans, but I didn’t eat any.
