I’ve got a couple racks of ribs on the smoker as we speak. One for my house with all the good stuff on it and one for my brother who is on the carnivore diet so his rack doesn’t look as exciting.

I am curious to taste how his comes out though. It’s my first time making it the way I did, using only salt, ghee and tallow.

Mines got all the good spices on it plus a little bbq sauce, and spritzing it with apple juice to keep it from drying out too much.

BTW.... I live < 2 hrs away and I'm still waiting for the invite for a BBQ at the compound.

I know what tallow is (thanks to joe rogan podcast) but ghee i have to google.

I never owned a smoker until I moved to Texas.

My brother moved here before I did. When I came to visit him he took me to Terry Blacks on the first day. Didn’t even go back to his house to drop off bags or anything. We went straight from the airport to Terry blacks.

One bite of their beef rib and I was like “Ayyy yoooo first thing I’m doing when I move here is buying a smoker and learning how to do this shit”.

Luckly I have a brother-in-law who has lived in Texas his whole life. He came over and taught me a thing or two.
