You're right, LT. I'd look at it from two perspectives:

1) From a prospective betting line perspective, Yes. FlaSt would have been a heavy dog.
2) The flip-side is what I'd call a pragmatic view. I hear the coach's sentiment. You play the game to fight thru adversity and achieve. Seminoles did that. It's really a great defense. I believe they have eight wins over bowl-eligible opponents.

This is the crushing part of making bets on bowl games. Opt-outs and transfer portal players.
You almost have to wait until the week before a given game to know for sure who's playing. By then the value has been worked out of the line and you stuck trying to figure out how well a backup will play.

Its not relavant since most are played at nuetral stadiums but sometimes they are close to home. You have to look at the game/school locations to see who will have the home field advantage.
