Funny. I’ve always liked them. The Cajun ones Popeyes used to have were awesome.

These were flavored with bacon and jalapeño today so real good.

They are kind of like charro beans. You either like them or don’t. And it totally depends on what they are flavored with whether they are good or not.

Guy, we had Hoppin John for breakfast.

blackeyed peas
onions
celery
green bell pepper
chicken broth
Cajun seasoning
Simmered for an hour with a ham bone from Christmas dinner.

Then remove the ham bone and add cut up smoked sausage and cook for another 20 min.

MMMMM Good.

You can substitute water for the broth. There is enough flavor coming off the ham bone and seasoning already.
