Its a boy scout thing.... Easy to make veggies and tastes great. Serves 10 easy.
Easy peasy veggie dish.
- Cut up 4 cups potatoes, 2 cups carrots, 2 cups celery, and 2 cups onions into cubes. Add extra of whatever you like.
- Put all of it in microwave dish with 3 tablespoons water and heat slightly for 6 minutes. Gets the veggies a little hot but not 100% cooked.
- Drain and add seasonings (salt, pepper, italian seasoning, etc...).
- Pile the veggies onto the center of a large sheet of heavy duty aluminum foil. Add 3 tables spoons of butter cut up into smaller pieces and spread out over the pile. Add 6 cut-up strips of precooked bacon (I usually skip the bacon and just add a tablespoon or two of bacon grease for really good flavor).
- Fold the foil up into a turtle shell looking thing (double roll-seal the edges) and leave some air space in the shell for expansion. Then grill for 30 minutes.
